Our food is prepared and served from a custom-designed cast iron rig which has an arresting design that's sure to be the talk of your party and many others for years to come. Our expert artisan chef Liam has over seventeen years of experience as a classically trained chef, and has travelled far and wide to bring you our unique taste. Our chef is a fully certified pitmaster trained in the US and Texas, and he will cook food for you and your guests to perfection. The food we serve is authentically mouthwatering, and we only use locally sourced Irish meat and poultry of the very highest standard.
Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master. We offer a unique service and we cater to unique tastes, so expect a memorable feast. We use two-year sun dried olive wood which is always sustainably sourced and is a renewable fuel. The design of our custom made cooking rig creates an even temperature distribution, protecting the food from harsh heat while allowing the smoke to flow all around the meat. Some of the treats you can look forward to include home made coleslaw and roast potato done with carefully selected ingredients.
