Brisket Boss are a new catering service with a difference. The choice cuts we use are hand-rubbed with a delectable variety of herbs, spices and sauces to provide a taste sensation that will make any event spectacular. Using both traditional ingredients and our every own home made dips and sauces, you're going to get a flavour like no other. You can share in the enjoyment of watching your food being cooked to perfection, and don't think vegetarians are left out, we also do savoury and scrumptious vegan food.
The big advantage slow cooking has over other kinds of cooking, when it comes to meat, is that it produces a very tender and succulent result, whether in beef, pork, or bird. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. We use two-year sun dried olive wood which is always sustainably sourced and is a renewable fuel. The design of our custom made cooking rig creates an even temperature distribution, protecting the food from harsh heat while allowing the smoke to flow all around the meat. A fourteen hour smoked brisket is an experience unto itself, and it can be eaten by itself or on our fluffy brioche buns with juicy peppers.
We make certain that only top quality woods are used in the cooking process allowing for hours of clean, low smoke cooking. We create some of the tastiest and most appetising culinary creations in Ireland.
