The wood and charcoal we use in our firepit are of a particular type of olive wood that enhances everything cooked on it. Using both traditional ingredients and our every own home made dips and sauces, you're going to get a flavour like no other.
Pork belly, pulled pork shoulder and beef ribs are among our specialities, and not only do we use the latest and finest cooking techniques, we have adapted them to Irish meat. Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master. Our smoking rig is amazingly eye catching and has an appealing yet slick and sophisticated look that will cause a ripple at your event. The design of our custom made cooking rig creates an even temperature distribution, protecting the food from harsh heat while allowing the smoke to flow all around the meat. A fourteen hour smoked brisket is an experience unto itself, and it can be eaten by itself or on our fluffy brioche buns with juicy peppers.
