As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. A fourteen hour smoked brisket is an experience unto itself, and it can be eaten by itself or on our fluffy brioche buns with juicy peppers. Some of the treats you can look forward to include home made coleslaw and roast potato done with carefully selected ingredients. Pork belly, pulled pork shoulder and beef ribs are among our specialities, and not only do we use the latest and finest cooking techniques, we have adapted them to Irish meat. The design of our custom made cooking rig creates an even temperature distribution, protecting the food from harsh heat while allowing the smoke to flow all around the meat.
