We specialise in the traditional Texan style of low and slow cooking over dried woods. This slow cook results in tender juicy meat while the smoke lends its distinctive flavour and character to our offerings.
We have carefully adapted these methods for Irish produce and use only locally sourced ingredients. Our fully traceable meats are smoked using additive free charcoal and dried woods including olive and apple.
Offerings include our signature 12 hour smoked brisket, coated in our own homemade rubs and smothered in sauce which will melt in your mouth! Try it on its own or in a brioche bun topped with home prepared pickles and jalapenos. We also serve up the best pulled pork shoulder you will ever try as well as pork belly ribs and spicy chicken wings. We enjoy experimenting with the smoking process and love to try out new things including a variety of vegetarian options.
Side options include Mac and cheese, corn on the cob, homemade slaw, baked potato and BBQ baked beans.

True to the Texan tradition, our brisket is coated with our house rub and cooked slowly over the indirect heat provided by dried oak and hickory wood. This process infuses the meat with a delicious smokey flavour.
The result is a juicy brisket that is exploding with flavour and can be experienced on its own, in a bun or in combination with other meat options.
