The wood and charcoal we use in our firepit are of a particular type of olive wood that enhances everything cooked on it. The choice cuts we use are hand-rubbed with a delectable variety of herbs, spices and sauces to provide a taste sensation that will make any event spectacular. Our smoking rig is amazingly eye catching and has an appealing yet slick and sophisticated look that will cause a ripple at your event. We use two-year sun dried olive wood which is always sustainably sourced and is a renewable fuel. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. The smooth and silky flavour of the well-done brisket is like tender savour flowing through your taste buds. Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master.
