The wood and charcoal we use in our firepit are of a particular type of olive wood that enhances everything cooked on it. Our food is prepared and served from a custom-designed cast iron rig which has an arresting design that's sure to be the talk of your party and many others for years to come. The choice cuts we use are hand-rubbed with a delectable variety of herbs, spices and sauces to provide a taste sensation that will make any event spectacular.
We take artisan food to a whole new level. Our smoking rig is amazingly eye catching and has an appealing yet slick and sophisticated look that will cause a ripple at your event. Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. Pork belly, pulled pork shoulder and beef ribs are among our specialities, and not only do we use the latest and finest cooking techniques, we have adapted them to Irish meat.
