We take artisan food to a whole new level. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. The versatile cooking rig is equipped with a king sized smoking chamber and charcoal grill, which lets people watch the appealing process. Pork belly, pulled pork shoulder and beef ribs are among our specialities, and not only do we use the latest and finest cooking techniques, we have adapted them to Irish meat. A fourteen hour smoked brisket is an experience unto itself, and it can be eaten by itself or on our fluffy brioche buns with juicy peppers.
