As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. Our smoking rig is amazingly eye catching and has an appealing yet slick and sophisticated look that will cause a ripple at your event. We use two-year sun dried olive wood which is always sustainably sourced and is a renewable fuel. We take artisan food to a whole new level.
