Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. Some of the treats you can look forward to include home made coleslaw and roast potato done with carefully selected ingredients. The design of our custom made cooking rig creates an even temperature distribution, protecting the food from harsh heat while allowing the smoke to flow all around the meat.
