The choice cuts we use are hand-rubbed with a delectable variety of herbs, spices and sauces to provide a taste sensation that will make any event spectacular. Using both traditional ingredients and our every own home made dips and sauces, you're going to get a flavour like no other.
The versatile cooking rig is equipped with a king sized smoking chamber and charcoal grill, which lets people watch the appealing process. Brisket is taken from the lower chest of beef, which is ordinarily one of the tastiest but toughest, unless it's very carefully prepared, which is the highest art of the smoke master. Pork belly, pulled pork shoulder and beef ribs are among our specialities, and not only do we use the latest and finest cooking techniques, we have adapted them to Irish meat. As is the way in the Texan tradition, our brisket is layered with our house rub and cooked for many hours over the indirect heat provided by dried oak, olive and hickory wood. A fourteen hour smoked brisket is an experience unto itself, and it can be eaten by itself or on our fluffy brioche buns with juicy peppers.
